Dragon Well loose leaf green tea - From the Fujian province of China, Longjing is called by its translation, Dragon Well tea. Dragon Well is pan fired roasted green tea variety from the Longjing Village in Hangzhou, Zhejiang Province of China. Renowned for its high quality flat leaves, it is produced by hand. Longjing tea leaves are roasted immediately after picking to stop the natural oxidation process implemented in producing black oolong teas. Pan firing the leaves stops the oxidation process. Dragon Well produces a yellow-green color when steeped. Green teas are sensitive to temperature and steeping time. If not made correctly, the tea will turn astringent and bitter.
Directions: Use 3 grams (a heaping teaspoon) of tea in ten (10) ounces of water. Steep for 3 minutes at 160 degrees Farenheit. A second infusion is possible, though lighter.
